


Südtirol Pinot Bianco DOC
The Pinot Blanc arrived in South Tyrol ca. 150 years ago, together with the other Pinot varieties. Only the Pinot Blanc had a large success since the beginning and became the most important white variety of the region. Our Pinot Blanc is grown in the higher vineyards around Bolzano, on sunny slopes with orientation towards south-east to south-west and a in part sandy, in part argillaceous porphyryic terroir. After the alcoholic fermentation at 20 °C it is passed in stainless steel. Malolactic fermentation is avoided, so that we pass the whole fruity notes to the wine.
The wine has a greenish to pale yellow colour and a fine and fruity aroma remembering to citrus fruits and apple. The taste is dry, fresh and lively, fruity with a well equilibrated acidity.
The Pinot Blanc is good as aperitif, with warm and cold starters, cooked fish and not to spicy white meat.
The best service temperature is 10-12 °C. A Pinot Blanc should be drunk young, best during the first two years after the havest.

Alto Adige Valle d'Isarco Sylvaner DOC
The Eisack valley is one of the best areas for white wine of Italy. On his sunny and steep slopes above the impressing gorge of Eisack river even in high summer the nights are cool. So the acidity is conserved and the grape develops a marvellous aroma.
So, also our Silvaner is a fresh and fruity dry wine, with aromas of citrus fruits and alpin herbs, ideal to light starters, asparagus, wine soup and cooked or grilled fish. A Silvaner is also a perfect aperitif wine.
Also the Silvaner should be drunk young, within its first two years. The best service temperature is 10-12 °C.

Alto Adige Müller Thurgau DOC
What would have said Mr Müller, if he knew about the huge success his new breed would have? After all it’s the most common variety of Germany, and also in South Tyrol it is very important. With the varieties of Riesling and Chasselas (Gutedel) as parents, the Müller Thurgau has notable characteristics, with his elegant aroma, his flowery notes of elder and a spicy muscatel.
Our Müller Thurgau is grown in two vineyards high above the city of Bolzano, on a sea level of 600-700 m, close to Rafenstein castle. The altitude favourites the development of the aroma and guarantees a good level of acidity. Both is very important for this variety. The Müller Thurgau is a very good aperitif and is great to drink together with starters, fish and not too spicy meat. As service temperature we would recommend 10 – 12 °C, and it is best during the first two years after the harvest.

Alto Adige Chardonnay DOC
The Chardonnay was known for a long time as „Yellow“ Pinot Blanc and usually mixed with the normal Pinot Blanc. In the meantime the variety showed that it is able to give excellent wines in our region. A notable body meets a stimulating elegance, fine fruity notes (peach) and a exciting freshness.
It is grown on a medium altitude, about 300 and 400 m, and is a typical South Tyrolean Chardonnay. An attentive temperature control during the fermentation gives us a wine rich on grape aromas with a good equilibrate between body and harmony. It’s an excellent attendant of fish, not too light starters and white meat.
It’s best during the first two years after vintage and served at a temperature of 12-14 °C.

Although the Pinot Grigio is a relative of Pinot Bianco, they are quite different – not only because of the copper colored berries of the Pinot Grigio, but also because of the characteristics of the wines. The Pinot Grigio is more complex, with more intense colour and notes of banana, vanilla and spices.
Our Pinot Grigio grows in Branzoll and Frangart, two villages in the South of Bolzano, one in the valley, the other one on a slight slope, on an altitude of 250 – 300 m. Another part comes from S. Giacomo in Sabbia next to Bolzano from 450 m and from Auna di Sotto at 600 m. In this way, we have a full-bodied, structured, but also mineralic and elegant wine, and a great caution in the vinification make the typical fruity notes pass from the grape to the wine. The Pinot Grigio fits very well with fish, starters and not too spicy white meat. The best service temperature is about 10 – 13 °C. The Pinot Grigio should be opened within 2 or 3 years after bottling.

Alto Adige Sauvignon DOC
The Sauvignon ist he youngest child of the Rottensteiner cellars. It was planted in the year 2001 by one of our best winegrowers in Missian near Eppan. It’s well known that Eppan is very suitable for the cultivation of Sauvignon, and many Sauvignons of this area reached the highest acknowledgments. Because of this we are sure that also our Sauvignon deserves to be considered, with his sapidity, his freshness, the fine aromaticity, his typical notes of paprika and elder.
The Sauvignon is good as aperitif, with not too heavy starters and most fish dishes. A special combination is Sauvignon with asparagus. Therefore the Sauvignon is also called “Spargelwein” (Wine for Asparagus).
The best service temperature is about 12- 14 °C. It’s best in his first 3 years.

Alto Adige Gewürztraminer DOC
Starting from his place of birth, the village Tramin in the southern Alto Adige, this variety conquered almost the whole world. Sill, he shows his best characteristics in his home country, with his typical spicy (cloves), floreal (roses) and fruity (lychee) notes. Actually has this variety, at least what reguards his aromaticity, very few concurrents.
With the Gewürztraminer of our classic line we wanted to underline the elegant side of this variety. It’s almost dry, which makes him easier to drink than his sweeter relatives, and it’s also easier to combine with various dishes. It’s a good choice as aperitif, with tasteful starters, grilled fish, seafood, crustaceans and white meat.
The Gewürztraminer has a good aging potential, but we recommend drinking this one during his first 3 years. The best service temperature is 12 – 15 °C.

Alto Adige Moscato Giallo DOC
The Moscato Giallo is a variety which usually gives very aromatic, but not fullbodied wines. Because of this, we planted our Moscato Giallo in low altitude vineyards on approx. 350 m. In this way we can produce an almost dry Moscato Giallo without having to live with the slightly bitter notes many dry Moscati Gialli have.
Our Moscato Giallo is of a straw yellow colour with golden reflexes, very aromatic with great nutmeg notes. The main target in the vinification of this wine was to transfer all the primary aroma from the grape to the wine.
The Moscato Giallo is great as aperitif and it fits with intensive fish dishes and crustaceans. The Moscato Giallo lives of its primary notes, therefore you should drink it in its first two years. The best service temperature is 12 – 14 °C.

Alto Adige Lagrein Rosé DOC
The Lagrein Rosè is produced by pressing the grapes of Lagrein. This variety is rich in colour, that already the small injuries of the skin during the pressure are enough to colour the must in the characteristic light ruby red.
Our Rosé is cultivated in Bolzano-Gries, the classic area of Lagrein. A high quality of the grapes and a rigorous control of the entire vinification process gives life to a wine to be considered among the great rosé wines of this world, with its fruity notes of cherry and strawberry.

Lago di Caldaro Scelto DOC
The Kalterersee Auslese is one of the best known wines of Alto Adige – and in the meantime way better than his reputation. The times of the huge harvests are over, and the Kalterer has become an elegant, fruity and light red. Only the best grapes can be used for the Auslese (= Selection), and strict laws ensure that the quality can’t be “produced” in the cellar but has to come from the vineyard. So it is forbidden to add concentrated must to the grapes to raise the content of alcohol in the wine.
Like all wines of the Schiava variety, also the Kalterersee is a very versatile wine, light and easy to drink, which goes brightly together with starters, poultry, white and red meat and especially with cold cuts. The Kalterersee is best served young, within its first 2-3 years, and at a temperature of 15 – 17 °C.

Alto Adige Santa Maddalena Classico DOC
St. Magdalena maybe is the best area for viticulture of whole Alto Adige. In 1941 the St. Magdalener was nominated – together with Barbaresco and Barolo – as one of the three wines of Italy. The orientation to South to South East is optimal, and together with the loose sandy porphyry soil we have all the requirements to produce great wines.
Schiava grapes, together with 4 – 5 % of Lagrein, make the St. Magdalener. As this Lagrein is cultivated in the same vineyard as the Schiava and harvested together, it can be integrated since the beginning granting for perfect harmony.
The St. Magdalener is a slight wine, fruity and fullbodied, reminiscing at violets and cherry and slightly at bitter almonds in the aftertaste. It can be served with almost every dish, starters, fish, white and red meat, even with venison. The best termperature is about 15 – 18 °C, it should be drunk within 3 years after bottling.

The Pinot Noir is cultivated in Alto Adige for approximately 160 years, and it feels very well in this area. Alto Adige’s Pinot Noirs are among the best of Italy and they have caused attention also at international tastings. Tough, the Pinot Noir is a very difficult variety, with high requirements at the soil and the climate, reacting very sensitively at excessive productions and demanding highest attention in the cellar.
The Pinot Nero is a full bodied, elegant and fruity red, with a distinctive sour cherry aroma, which goes perfectly along to red mead, venison and zesty cheese.
As drinking temperature, we’d like to recommend 18 – 20 °C. Our Pinot Noir can be aged for 4 – 5 years after bottling, good vintages even longer.

Alto Adige Lagrein Riserva DOC
The Alto Adige Lagrein Riserva DOC derives from the deep sedimental soils of the Talfer River in Bolzano, which are optimal for this variety and responsible for the pleasant character of Lagrein wines from Bolzano. Due to the urbanization during the last 60 years, the area under cultivation was decimated; therefore, the winegrowers take even more care of the quality in the remaining vineyards.
The Lagrein has a dark ruby colour, during its youth with violet, later with garnet red reflexes. It is a pleasant, dry red wine, with notes of violets, chocolate and liquorice, on the palate it is velvety and with mild acidity. It is rich in tannins, but in the Bolzano basin, these tannins evolve in a very mild and sweet way.
Recommended pairings are game, red meat and matured cheese. The serving temperature should be around 18 – 10 °C. The Lagrein can be aged for 5 – 6 years, good vintages even longer.

Our Cabernet Riserva is grown on the deep sedimental soils of Branzoll, Bolzano and Caldaro. A high age of the vines and a strict limitation of the yield guarantee for a high quality of the grapes. A high percentage of Cabernet Franc (30 %) give to the wine its unique character.
The Cabernet has deep garnet red colour, an intense aroma of black currants with slight erbaceous notes, on the palate it’s full bodied and permanent with smooth tannins.
The Cabernet can be paired with almost all intense dishes, grilled or roasted red meat, game and strong cheese.
The drinking temperature should be about 18 – 20 °C, a Cabernet lasts for at least 5 – 6 years, good vintages even longer.
